| description | The sectoral census of identification of sweet production units, allow the identification of the producers of sweet in Ocaña and the region engaged in this activity. Thus, It was possible to find the types of products developed in the region and basics characteristics of the companies and individuals engaged in this activity.
The findings in this research allowed the finding of basic characteristics in the production process, the legal industry conditions, product standardization, the types of raw material used and demographic characteristics of the companies and people associated with sweet production in the region.
Most sweets manufacturers are not currently being legally constituted and food products are restricted to the legislation regulatedby“Instituto Nacionalde Vigilanciade Medicamentos y Alimentos - Invima” (National Institute of Food and Drug Monitoring). This situation complicates the products treading in different markets, because by not having the registration Invima the product could not be sell legally in Colombia.
The regional sweets companies or persons have several difficulties. However, some cases demonstrated that with training in law regulations and production processes could be structure a legal production of sweets and introduce these products in new markets. |

El censo sectorial de identificación de unidades productivas de dulces permitió identificar a la gran mayoría de los productores de dulces de Ocaña y la región, que actualmente se dedican a esta actividad. Por medio del cual se pudo hallar la tipología de los productos que desarrollan en la región y las características de las empresas y las personas naturales que se dedican a esta actividad. Los hallazgos encontrados en esta investigación permitieron determinar cuáles son las características básicas en el proceso de producción, las condiciones legales del sector, la estandarización del producto, el tipo de materia primera para la realización y las características demográficas de las empresas y personas naturales vinculadas a la producción de dulces en Ocaña y la región. La mayoría de los productores de dulces actualmente no se encuentran legalmente constituidos y al ser productos alimenticios se encuentran restringidos a la normativa legal direccionada por el Instituto Nacional de Vigilancia de Medicamentos y Alimentos (INVIMA). Esto dificulta que los productos se puedan comerciar en diferentes espacios, pues al no contar con el registro INVIMA el producto no puede ser vendido de forma legal. Alrededor del sector se presentan varias problemáticas, sin embargo, algunos casos especiales han permitido determinar que estructurando mejor el proceso de producción y capacitándose en normativa legal y en procesos de producción que permitan reglamentar legalmente la producción de este tipo de alimentos, los productores podrían empezar a introducir sus dulces en nuevos mercados, de forma rentable.
