Summary:The sectoral census of identification of sweet production units, allow the identification of the producers of sweet in Ocaña and the region engaged in this activity. Thus, It was possible to find the types of products developed in the region and basics characteristics of the companies and individuals engaged in this activity. The findings in this research allowed the finding of basic characteristics in the production process, the legal industry conditions, product standardization, the types of raw material used and demographic characteristics of the companies and people associated with sweet production in the region. Most sweets manufacturers are not currently being legally constituted and food products are restricted to the legislation regulatedby“Instituto Nacionalde Vigilanciade Medicamentos y Alimentos - Invima” (National Institute of Food and Drug Monitoring). This situation complicates the products treading in different markets, because by not having the registration Invima the product could not be sell legally in Colombia. The regional sweets companies or persons have several difficulties. However, some cases demonstrated that with training in law regulations and production processes could be structure a legal production of sweets and introduce these products in new markets.
